Sour Spicy Pomelo Salad - Yam Som Oo






Ingredients :

  • Pomelo 1
  • Boiled Fresh Shrimps 300 g.
  • Fry Dry Shrimps 100 g.
  • Toasted coconut flakes. 1 cup
  • Palm sugar 2 tablespoon
  • Fish Sauce 2 tablespoon
  • Salt 1 teaspoon
  • Lemon Juice 3 tablespoon
  • Pea nut (Toasted) 1 cup
  • Chilli powder 1 tablespoon
  • Kaffir Lime Leave 3 leaves
  • Coriander (chopped) 3 tablespoon



Sauce Preparation:

Mix lemon juice with fish sauce, salt, palm sugar, chilli power and 2 tablespoon of crush peanut and toasted coconut flakes and dry shrimps.

Preparation:

Season the sauce together with all ingredients and shrimps. Serve with some fresh vegetable.

Vegetarian Tofu Salad-Larb Tofu




Ingredients
:

  • Solid Tofu 1 pc ( 300 g.)
  • Mushroom 1 cup (chopped or sliced)
  • Chili Powder 1 tablespoon
  • Rice Powder 1 tablespoon
  • Big Onion 1 (sliced)
  • Shallot 3 (chopped)
  • Mint 10 leaves
  • Kaffir Lime 4 leaves (sliced)
  • Lemon Juice 1-2 pcs
  • Salt 1 teaspoon
  • Light Soy Sauce 1 tablespoon
  • Vegetarian Broth ½ cube
  • Galangal 300 g
  • Water 1 cup

Preparation Method:

Prepare stock by boiling water with vegetarian broth, galangal, half of a big sliced onion and the mushrooms for 3 minutes. Grind the tofu, add a little bit of salt, soy sauce and 1 kaffir lime leave and boil for another 2 minutes. Take all ingredients out of the water, using a sieve and put everything in a big bowl. Slice the other half of the big onion and fry the slices until they are transparent. Mix the fried onion with the tofu., and season it with rice powder, chili powder, sliced shallots, sliced kaffir lime leaves, lemon juice, salt and the soy sauce.

Serve with fresh vegetables such as salad or cucumber slices and basil leaves.
